Greetings Athletes,

In the 2nd Edition of the Dean Karnazes' Endurance For Life Newsletter we have some exciting information including Karno updates, new event announcements, and of course fitness tips and recipes for all you endurance heads. First, congratulations to Dean for completing his eighth straight 199-mile run from Calistoga to Santa Cruz in “The Relay”. While the race is intended for 12 person teams, Team Dean seems to make the “double century” run look easier every year. Big high fives to Dean and the rest of “The Relay” participants for continuing to bring awareness and much needed funding to the race’s official charity “Organs R’ Us”. Shrimp Ceviche Fueling the Fire:
Shrimp Ceviche

Ingredients:
Ingredients: 2 pounds of freshly washed shrimp
2 cups jicama
3 firm organic tomatoes
3 fresh lemons
3 fresh limes
1 fresh red onion
1 bushel of cilantro
1 tablespoon of olive oil
1 tablespoon of cayenne pepper
1 tablespoon Alaea sea salt

Preparation:
In a large bowl, squeeze the lemons and limes. Cut shrimp and place into bowl. Add olive oil, half a teaspoon of salt and half a teaspoon pepper to bowl and stir. Allow shrimp to soak for an hour. Cut jicama, tomatoes, onions and cilantro into small pieces. After an hour, add all ingredients to bowl and season with remaining salt and pepper to taste.

Ceviche is a healthy alternative to shrimp cocktail sauce, and much more tasty!

Quick Take:
Stepped on gum? What runner hasn’t, arrr! Before attempting to wipe or scrape it off, take a piece of ice to it. The gum will chip away effortlessly and easily, saving you time (and gooey fingers!).
